How to make cheesy potato stacks without a muffin tin

These cheesy potato stacks are like mini potato gratins. The individual serves are buttery and creamy on the inside and crisp on the outside. They’re fun to make for a family meal and are especially good for entertaining. A great side for a grilled steak or a tender roast – these parmesan stacks may look small and delicate but they don’t hold back on flavour.

 

 

Crispy parmesan potato stacks

Prep Time: 10 minutes
Cook Time: 45 minutes
Serves: 6

INGREDIENTS

1kg starchy potatoes such as Nicola or Desiree variety, washed
150g melted butter
1/2 cup grated parmesan
1 tsp smoked paprika
1 tsp salt
1/4 extra grated parmesan, to serve

METHOD

  1. Pre-heat oven to 200°C (180°C fan forced)
     
  2. Using a mandolin or food processor, slice each potato thinly
     
  3. Transfer slices to a large bowl, add melted butter, parmesan, salt, smoked paprika. Mix well with hands
     
  4. Line a large oven tray with baking paper. Make an even number of stacks and secure each with a toothpick
     
  5. Roast for 45 mins to an hour or until golden and tender. Sprinkle stacks with extra parmesan, remove toothpicks and serve immediately

How to get perfect crispy parmesan stacks

The key to great potato stacks is to slice the potatoes evenly so that they cook at the same time. The easiest way to achieve this is by using a mandolin or a food processor. 

It's also important to coat each slice of potato well with seasoning and butter. This ensures that the stacks become golden and crispy and don't dry out in the cooking process.

Push a toothpick or skewer down near the centre of the stack. If it goes through without any resistance, the potatoes are cooked through.
