Easy, cheesy potato stack recipe made in a muffin tin. The trick to this flavour packed idea is to slice the potatoes the same size using a mandolin or food processor which ensures even cooking.

Crispy Parmesan Potato Stacks
Ingredients:
Method:
  1. Pre-heat oven to 200°C (180°C fan forced)
  2. Using a mandolin or food processor, slice each potato thinly
  3. Transfer slices to a large bowl, add melted butter, parmesan, salt, smoked paprika. Mix well with hands
  4. Line a large oven tray with baking paper. Make an even number of stacks and secure each with a toothpick
  5. Roast for 45mins to an hour or until golden. Sprinkle stacks with extra parmesan, remove toothpicks and serve immediately
