Air Fryer Lemon Curd and Blueberry Brioche Pudding
Ingredients:
Method:
  1. Spread one side of brioche slices with 1 tablespoon of the curd. Cut into quarters. Overlap slices in an 20cm x 5cm high (about 3 cup capacity) round ovenproof dish that will fit inside your air fryer basket, crust side up, in a circle and into the centre.
  2. Whisk together eggs, cream, milk and remaining curd until smooth. Pour evenly over brioche. Stand for 10 minutes to absorb. Sprinkle with blueberries, poking some in between slices.
  3. Air-fry at 120C for 20 minutes, increase heat to 150C and air-fry for 15 minutes or until the top is lightly caramelised and custard is set.
  4. Stand for 15 minutes for custard allowing custard to finish setting. Dust with icing sugar. Serve topped with ice cream and extra curd.
  5. OVEN INSTRUCTIONS: Cook in a moderately low oven (160C) for 40 minutes or until golden and custard is set. Allow to stand for 20 minutes. Dust with icing sugar. Serve topped with ice cream and extra curd with ice cream.
Tips & Hints:
  • You can use any berry or a combination of frozen berry fruits.
  • We used 8mm thick slices from a 500g loaf of pre-sliced brioche from the supermarket.
  • If your bowl is a tight fit in air fryer basket, make two 5cm thick wide straps of foil that will come up the sides of basket. Place foil straps in basket to form a cross. Place bowl on top. Tuck foil straps down beside bowl whilst cooking. Then use to easily remove, with oven mitts, once pudding has cooled a little.
  • It is important to use a shallow flat dish for air frying for custard to set. Round bowls do not work.
