These easy avocado, mango and chilli prawn cups are a delicious entree or appetiser to enjoy on Christmas Day or for any dining occasion during the season when mangoes and seafood are at their best.

Avocado, Mango and Chilli Prawn Cups
  1. Chop prawns into bit 1cm pieces and set aside
  2. Combine all ingredients into a bowl and mix until combined. Add prawn pieces and toss. Season with salt and pepper to taste
  3. Top individual cob lettuce leaves with prawn mix and garnish with extra chilli and chives
  4. Serve immediately
