BBQ Chicken and Hokkien Noodle Salad

Ingredients:
BBQ Chicken and Hokkien Noodle Salad
400g heat and serve Hokkien noodles
1 store-bought BBQ chicken
1 cup snow peas, each sliced into 4 pieces on the diagonal
2 Lebanese cucumbers, halved lengthwise and sliced
1/2 cup coriander leaves
1/3 cup mint leaves, roughly torn
3 Spring (green) onions, finely sliced
Dressing
1/2 cup (125mL) Kikkoman Naturally Brewed Soy Sauce
2 tablespoons (40mL) balsamic vinegar
2 teaspoons sesame oil
1/4 cup (60mL) fresh lime juice
2 tablespoons sugar, or to taste
1 red chilli, finely sliced (optional)
Method:
BBQ Chicken and Hokkien Noodle Salad
Heat noodles according to instructions on pack. Drain, and then cool under cold running water
Blanch snow peas quickly, drain, and then refresh under cold water
Pull the skin and meat from the chicken with your fingers, shredding the meat
Cut the skin into strips
Place the noodles in a large serving bowl, top with the chicken, snow peas, cucumber, coriander and mint
Toss gently to combine
Tips & Hints:
The dressing can be made the day before and stored in the refrigerator until needed. Drizzle dressing just before serving and top with spring onions.
Chinese roast duck can be substituted if desired.
Dressing
Place all ingredients and place in a glass screw-top jar and shake well to dissolve the sugar
Drizzle over the dressing just before serving
