Berry Mousse With Glazed Berries
Ingredients:

Method:
Mousse
- Wash strawberries and raspberries. Drain well. Puree until smooth.
- Beat egg yolks and sugar together with electric beaters until light and creamy
- In a small bowl, sprinkle gelatine over warm water and stir until smooth. Dissolve gelatine mixture over a hot water bath
- Add pureed berries, Vitasoy Soy Milky Lite and gelatine to egg yolk mixture and stir until smooth and well combined
- Spoon in 6 lightly greased mousse bowls or glasses and refrigerate until set (at least 3 hours)
- When set, Serve in glasses or gently turn out mousse. Top with glazed berries
Glazed berries
- Place sugar and water into a small saucepan and over a gentle heat, stir constantly until sugar dissolves. When sugar has dissolved and mixture is boiling, stop stirring and boil for 5 minutes but do not let mixture brown. Cool completely
- Combine berries in a medium bowl and pour over cooked syrup. Serve with berry mousse
