Ingredients:
Method:
  1. Place all ingredients in a mortar and using pestle pound until fine and mixed thoroughly
  2. Rub mix all over chicken, Place lemon quarters in cavity of chicken Fold under wings. Place chicken on a roasting rack over a large baking dish, add sprig of thyme to baking dish. Bake in 190°C preheated oven for 1 hour and 45 minutes, or until cooked through
