Cinnamon French Toast Muffins
Ingredients:
Method:
  1. Preheat oven to 180°C. Grease a 12-hole muffin tin
  2. In a large bowl, whisk eggs, milk, cinnamon, sugar and vanilla. Add cubed bread and use clean hands to gently toss and evenly coat all of the bread pieces
  3. Set aside for 5 minutes to allow for the bread to absorb the liquid
  4. Gently stir one last time, then divide mix between muffin holes, pressing gently to make compact and to use up all of the bread
  5. Bake for 25 minutes or until cooked. Cool in muffin tin for 5 minutes before scooping out
  6. Brush or drizzle with maple syrup
