- Combine in a serving bowl the cabbage, capsicum, carrot, cucumber, spring onions, mint and dressing and toss lightly. Scatter over the peanuts and decorate with extra mint. Serve immediately
Tips & Hints:
- For added zing toss through some chopped fresh red or green chili.
