Herb Rub with Onion and Cherry Tomato Stuffing Roast Chicken
  1. Place one teaspoon of each dried herb, all the breadcrumbs and tomatoes in a bowl, mix well. Cook the onion in a lightly greased pan until softened, stir through breadcrumb mixture
  2. Fill chicken cavity with stuffing, close with toothpicks or skewers. Tie drumsticks together and fold under wings. Combine remaining herbs, garlic and oil in a small bowl. Rub herb mixture all over the chicken
  3. Place chicken on a roasting rack over a large baking dish. Bake in 190°C preheated oven for 1 hour and 45 minutes, or until cooked through. Serve with zucchini flowers
