Spicy Pear Sauce
Ingredients:
Method:
- Tie the lemon slices, mustard seeds and cinnamon in a muslin bag
- Place the vinegar, water, brown sugar in a large pot and stir over heat to dissolve the sugar
- Add all the other ingredients, reduce heat and simmer for 1 hour, stirring occasionally
- Remove from the heat
- Discard the muslin bag and then blend with a stab blender till smooth. Strain through a fine sieve
- Pour into hot sterilized bottles and seal immediately
- If using immediately the sauce will keep refrigerated in an airtight container up to 2 weeks
