Vegan Vegetable Korma

Paste
- To make the paste, combine all the ingredients into a bowl of a food processor or blender. Process until it forms a paste. Set aside
Tips & Hints:
- To save time, you can always purchase a store-bought vegan korma paste. You can also serve with papadums and mango chutney. Yum!
Curry
- Combine cashews and Vitasoy Milkie Lite milk and soak for 30 minutes. Pour into the bowl of a food processor or blender and process until smooth. Set aside
- Steam, boil or microwave carrot and potato until just tender.
- Heat oil in a large pan over medium high heat. Add onion and cook 3-4 minutes or until softened. Stir in prepared paste and continue cooking for 5 minutes or until paste is fragrant. Add peas and cooked vegetables. Simmer for a few minutes. Stir in cashew milk and continue cooking until sauce thickens and vegetables are tender. Serve immediately with steamed rice
