Weet-Bix Apple Fritters
Ingredients:
Method:
- In a medium bowl, combine eggs, soy milk and banana. Mix well
- Add baking powder, cinnamon, flour and stir to combine. Stir through crushed Weet-Bix
- Dip apple rings one at a time into extra flour to lightly coat
- Dip into the batter, and shallow fry in oil over a medium heat, turning after 1 minute. Remove and set aside. Keep warm while cooking the remaining apple fritters
- Dust with icing sugar, and serve with fruit and yoghurt
