Weet-Bix Pancakes with Berries and Yoghurt

- In a medium-sized mixing bowl, combine Weet-Bix, sifted flour, cinnamon and bi-carb soda. Set aside
- In a separate bowl, whisk eggs then add vanilla, soy milk and melted margarine. Stir to combine
- Pour the dry mix into the wet, and mix until pancake batter is well combined
- Heat a non-stick fry pan over medium heat. Place 1/4 cup of the mix into the pan and cook until bubbles appear. Flip and cook for approximately 30 seconds on the second side
- Remove and keep warm. Cook remaining pancakes, repeating process. Serve with maple syrup and berries
