How to make an inside out omelette

When you take the cheesy insides of an omelette and put it on the outside, it’s a whole new breakfast experience! Instead of the usual soft and delicate eggs, you get a slightly crisp golden cheese shell full of tender eggs and the fillings of your choice. This cooking technique for inside out omelettes has become a viral TikTok trend, and for more than one reason. It’s great for people following keto or low-carb diets, and it’s also easy for beginners because the cheese makes the omelette easier to flip. Inside out omelette recipe



2 eggs
2 tbsp pure cream
Salt and pepper to taste
¼ cup grated cheese
Thyme or herbs of your choice
Avocado slices and grilled tomato, to serve


  1. Crack eggs into bowl, add cream and season with salt and pepper. Whisk until combined.
  2. Preheat a small non-stick frying pan over medium heat. Sprinkle cheese in an even layer over surface of the pan. Once cheese is slightly melted and bubbling, pour egg mixture evenly over the cheese. Tilt pan gently to spread the egg evenly.
  3. Cook until just set. Sprinkle with herbs and fold omelette in half.
  4. Serve with avocado and grilled tomato for a low-carb meal.


  • A non-stick pan is essential to stop the cheese sticking.
  • If the cheese is still stringy and sticking to the pan when try to flip it, allow it to cook a bit longer until the cheese crisps up. It should be easy to flip.
  • If your cheese is browning too fast, turn down the heat and cover the pan with a lid to help the eggs set.

You can add any fillings you like into your omelette before you fold it over. Ensure whatever you add is precooked or ready to eat, as there won't be enough heat to cook it.
