How to save a lumpy sauce

A creamy bechamel or a hearty gravy should be the crown atop a delicious meal until you spot….lumps! All is not lost; we have some handy tricks to save your sauce and dinner. 
Whisky business
If the sauce has just a few lumps, use a balloon whisk and whisk vigorously to break the lumps up.
Strain it
  • Crack out your finest strainer, place it on top of a clean saucepan and pass the sauce through 
  • Use a spoon to apply pressure and push the smooth sauce through the strainer
  • Gently reheat the sauce and serve
Blender to the rescue
Use a food processor, blender or immersion blender to whizz those lumps out of sight. Return to heat and whisk until warmed through.
