If you've just whipped up a perfect pavlova for Australia Day or a meringue topping for a cake, chances are you've got at least three or four egg yolks leftover. You're keen to do something with them but how long can you keep egg yolks in the fridge? Read on to find out what to do with egg yolks including delicious egg yolk recipes like custards and tangy fruity curds.
How long can you keep egg yolks?
So you've got a handful of lovely plump orange egg yolks on hand but no time to cook with them. Easy, simply store them in an airtight container in the fridge for up to 3 days. Some eggsperts say that they store better if you give them a quick whisk before putting on the lid, while others say cover yolks with cold water to stop them drying out.
 
You will need to remove from the fridge about 30 minutes before using in a recipes so they are not too cold.
What to make with egg yolks

  • Make a quick zabaglione – an Italian classic. You simply whisk egg yolks and sugar together in a heatproof bowl over a saucepan of simmering water for 5 minutes or until the sauce thickens.

  • Make a protein rich fresh pasta by adding egg yolks to the flour and water.
