Golden Sticky Toffee Pudding

Method:
Cake
- Preheat the oven to 140c.
- Prepare 6 individual pudding moulds by spraying with coconut oil.
- In a medium sized bowl whisk the eggs and milk.
- Whisk the melted butter into the eggs.
- Add the Lakanto Vanilla Cup Cake Mix and combine until it forms a smooth batter.
- Spoon the mixture into the individual pudding moulds and cover with clingfilm.
- Place the puddings into the middle shelf of the oven, on a tray with an inch of water in the base. Cook for 60-65 minutes at 140c, ensuring they're cooked by checking with a skewer.
Toffee Sauce
- Melt the butter in a small pot until it turns into a golden brown colour.
- Add the Lakanto brown sweetener to the pot and boil until it bubbles. Add the double cream and reduce the heat until thickened.
- Pour the toffee sauce over the pudding before serving. Enjoy!
