Mexican Layered Salad
Ingredients:
Method:
  1. Combine roasted red peppers, red kidney beans and chilli in a bowl. Season with salt and pepper
  2. Combine avocados and lemon juice in a bowl, season with salt and pepper
  3. Combine cucumbers, tomatoes, garlic and coriander in bowl, season with salt and pepper
  4. Place Cobs Naked Corn Chips and lettuce in the base of a serving bowl
  5. Layer with bean mixture, avocado mixture and cucumber mixture
  6. Top with sour cream
  7. Sprinkle with cheese and shallots
  8. Top up with more Cobs Naked Corn Chips as desired
