How to make crispy smashed potatoes

Take a simple boiled spud and turn it into something wonderful with this easy technique for crispy smashed potatoes. With no peeling involved, this idea is the perfect option for dinner party entertaining when you need to cut down on your prep time. You can also boil the potatoes the day before and have them in the fridge ready to bake.

Crispy Smashed Potatoes Recipe
Prep Time: 10 minutes
Cook Time: 35 minutes

INGREDIENTS
  • 1kg baby chat potatoes, boiled
  • 2 tbsp olive oil
  • 2 sprigs rosemary
  • Salt and pepper
 
METHOD
 
  1. Preheat oven to 200°C (180°C fan forced). Allow boiled potatoes to cool just enough to be handled
  2. Lay potatoes out on a large baking paper covered tray. Using the flat side of a large chef's knife, smash potatoes
  3. Drizzle smashed potatoes with olive oil. Strip the rosemary and sprinkle over potatoes. Season with salt. Transfer to the oven for 30-35 minutes or until golden and crunchy. Season with extra salt and pepper. Serve immediately
 
 
Should you make smashed potatoes in the oven or the deep fryer?
We chose to do this recipe in the oven, because it still achieves a yummy crispy skin but is a little lighter and much easier to make.
 
However, you can certainly adapt this idea for a deep fryer. All you have to do is transfer the potatoes to a heated fryer instead of popping them in the oven. They will only need a 3-4 minutes and will come out crispy and golden.
What can I put on smashed potatoes?
We used a simple seasoning of rosemary and sea salt to create a classic flavour. Use your favourite seasonings and spices, or choose flavours that match the seasonings in your main dish. Here are a few ideas to get you inspired:
 
  • Cheese + bacon
  • Garlic oil + parmesan
  • Sour cream + chives
  • Smoked paprika + cumin
  • Lemon oil + thyme
Which potato is best for smashed potatoes?
Baby potatoes (also called chat potatoes) work perfectly for this recipe idea. By using a smaller variety of potato, you create a good ratio between the crispy skin outer and the fluffy inside which makes for a great finished result.
