Chicken and Pesto Pita Pizza with Buffalo Mozzarella
  1. Preheat oven to 200°C
  2. Place pita bread rounds on a lined baking tray. Spread 1 tablespoon of pesto on each pita bread
  3. Evenly place slices of buffalo mozzarella, artichokes and leftover Lilydale Whole Chicken pieces onto the pita bread. Sprinkle with olives
  4. Cook in the oven for 5-7 minutes
  5. Place rocket leaves and extra pesto on pizza and drizzle with olive oil. Season to taste and serve
