Chocolate and Hip Chip Brownie

- Pre-heat oven to 160°C. Grease and line the base of an 18cm square cake pan
- Melt butter and chocolate together in a double boiler, then remove from heat and allow to cool slightly
- Beat the sugar, vanilla and salt into the mixture
- Whisk eggs one at a time into chocolate mixture. Beat well
- Add flour, beating until smooth
- Fold crushed Cobs Hip Chips through mixture
- Pour mixture into prepared pan, smoothing the top. Bake for 40 minutes or until a skewer comes out with a few moist crumbs attached (not a sticky batter)
- Allow to cool then dust with sifted cocoa powder
