Basic Pizza Dough
Creamy Ham, Spinach and Mushroom Pizza
  1. Preheat oven to 200°C
  2. Heat oil in heavy-based saucepan. Saute onions until clear, without colour. Add wine and thyme leaves, simmer until reduced by half. Add cream and simmer until reduced by half again. Season to taste, then sieve and refrigerate
  3. Roll pizza dough to make two 12-inch bases, approximately 5mm thick. Dock with a fork
  4. Spread sauce over bases, top with spinach, mushroom, ham and mozzarella
  5. Bake for 15 minutes or until golden
  6. Garnish with thyme sprigs and serve on a pizza board
Basic Pizza Dough
  1. Mix yeast with warm water and set aside in warm place until mixture foams
  2. In a large bowl mix flour, salt and sugar. Create a well and slowly mix in yeast mixture and olive oil until a dough forms
  3. Place dough in large lightly oiled bowl. Cover with damp towel and place in a warm place to proof
