Frittatas are always a good idea, especially when they're made with chorizo and corn. This easy recipe can be served warm or cool and is a great dinner idea with a side salad.

Chorizo and Corn Frittata
  1. Whisk together eggs, plain flour, milk, cream and chopped parsley
  2. Grease a 2 litres shallow ovenproof dish and spoon drained can of sweet corn then the grated cheese evenly into the prepared dish
  3. Gently pour in egg mixture and sprinkle the DON Premium Diced Chorizo evenly on top. Bake in preheated oven at 170°C for 20-25 minutes or until set. Allow to stand for 5 minutes before cutting into wedges and serving with a fresh garden salad
Tips & Hints:
  • Add half a red capsicum very finely diced in Step 2 with the sweet corn.
