Healthy Retro Tuna Mornay
Ingredients:
Method:
  1. Preheat oven to 220°C/200°C fan-forced
  2. Whisk Ricotta, milk, Dijon, zest and 1 cup of Perfect Melts cheese in a large bowl until combined. Season with salt and pepper. Measure out one cup of mix for next step
  3. Place tuna and green onion in a bowl and add 1 cup of ricotta mixture
  4. Cook brown rice according to directions. Drain. Spread rice over base of a 2 litre (8 cup) ovenproof dish. Sprinkle with peas
  5. Spread tuna mix on top of rice. Add egg to remaining ricotta mixture and stir to combine. Pour over tuna layer and spread to edges. Top with breadcrumbs, tomato slices and remaining cheese
  6. Bake for 20-25 minutes or until golden. Sprinkle with extra green onions. Serve with lemon wedges
Tips & Hints:
  • Add thawed and squeezed frozen spinach on top of tuna layer for an extra serving of green vegetables
  • You can use a 450g packet microwave brown rice instead of cooking your own. Heat rice according to directions
  • To freeze, cover the dish well in baking paper followed by cling film. Label and date. Freeze for up to 2 months. Alternatively, portion into small airtight containers and freeze. Thaw in the refrigerator overnight and reheat in the oven or microwave

Too easy and very good. Thank you To the review that asked where's the green. Read the recipe, look at the picture there are peas and in the tips other ideas to add green. Just saying.

I have not tried recipe as I use a better version which includes zuccini and celery. Only tomato and onion in this recipe. Where is the 'green' vegetable?? Very easy to dish up tomato and onion in a Bolegnaise or Neopol sauce but the challenge is to include other vegetables with a meal.
This is anything but healthy!

This is not healthy, the calories alone put this at almost 1000 calories per serving which is half the daily adult intake in one meal.
