You can easily substitute Chicken or Beef in this recipe if you prefer. This simple yet flavoursome stirfry can be on the table in under 20 minutes. A great mid-week meal idea.

Lamb Stir-Fry with Capsicum, Onions & Ginger
  1. Preheat oil in a wok or fry pan. Stir fry lamb in batches, until brown on all sides. Transfer to a plate
  2. Add onions, capsicum, Spring onions, garlic, ginger and chilliand stir fry for 2 minutes
  3. Combine stock, soy sauce and cornflour and add to pan
  4. Simmer for 2 minutes, stirring well until sauce thickens slightly. Return lamb to pan, making sure it is well coated with the sauce
  5. Place in individual serving bowls and serve with rice or noodles
Tips & Hints:
  • Lamb can be replaced with beef or chicken stir fry strips.
