Lamb Stir-Fry with Capsicum, Onions and Ginger

Method:
Lamb Stir-Fry with Capsicum, Onions & Ginger
- Preheat oil in a wok or fry pan. Stir fry lamb in batches, until brown on all sides. Transfer to a plate
- Add onions, capsicum, Spring onions, garlic, ginger and chilliand stir fry for 2 minutes
- Combine stock, soy sauce and cornflour and add to pan
- Simmer for 2 minutes, stirring well until sauce thickens slightly. Return lamb to pan, making sure it is well coated with the sauce
- Place in individual serving bowls and serve with rice or noodles
Tips & Hints:
- Lamb can be replaced with beef or chicken stir fry strips.
