Nasi Goreng Tray Bake
Ingredients:
  1. Preheat oven to 180°C. Heat oil in a large frying pan over a medium heat. Add chicken and cook for 10 minutes or until well browned. Add onion and garlic and cook for 3 minutes or until softened. Add kecap manis, soy, chilli sauce, sambal oelek and rice. Stir until well combined. Pour in stock and bring to the boil
  2. Remove from heat. Transfer to a roasting dish and cover with foil. Bake for 20 minutes. Add prawns to rice mixture. Make 4 indentations into the rice and break an egg into each indent. Recover with foil and bake for a further 10 minutes or until the egg whites are just cooked. Stand, covered, for 10 minutes. Top with onion, cucumber, tomatoes, peanuts and coriander and serve
Tips & Hints:
  • If you like a kick of heat, add 1-2 finely chopped small red chillies.

This is the second time I cooked this one in the last month. Really simple to make, tasty and the thumbs up from the family. The only variation I make is also add in a 3/4 cup of peas at the baking dish stage...and depending on the mood twice the sweet chilly sauce :)

Really love this dish. First time I've made it and all the family loved it. This is definitely a "keeper" and have added it to the "myfoodbook" cookbook. Added a cup of peas, 1 cup of additional rice as there were 5 for lunch and a 1cup of white wine as I only had the 4 cups of chicken stock and needed additional liquids for the additional rice. In hindsight, the standard recipe would have been plenty for 5 people :) ...although most did go back for seconds!!!
