A scrumptious summer lunch idea, this curry spiced rice salad is full of flavour with capsicum, sultanas, spring onions and cashew nuts for that added crunch.

Retro Curried Rice Salad
Ingredients:
Method:
  1. COMBINE the rice, capsicum, sultanas and spring onions in a serving bowl.
  2. Whisk together the dressing and curry powder and stir through the salad. Chill.
  3. Just prior to serving toss through the cashews. Serve immediately
Tips & Hints:
  • For a delicious addition toss through some chopped fresh or well drained canned pineapple.
