Turkey and Vegetable Meatloaf

Method:
- In a large bowl mix together the turkey mince, vegetables, eggs, garlic, parsley, sage, and mustard. Season with pepper. Mix until well combined
- Place mince mixture into a large, lightly greased, baking paper lined loaf tin. Bake in a 180°C preheated oven for 1 hour 10 minutes.
- Drain off excess liquid from pan. Let meatloaf stand for 5 minutes before turning out
- Serve meatloaf with leafy green salad of steamed beans

- Heat oil in a small pan and cook the onion until light golden brown. Pour in the tomatoes and cook for 2 minutes until heated through
