How to fix split mayonnaise

You’ve gone to all the effort of making fresh mayonnaise from scratch but the batch is beginning to split! It is a cook’s worst nightmare, but luckily we have some tricks to rescue your mayo and get it on those sandwiches ASAP.
Whisk it
To rescue mayonnaise that is just beginning to split, quickly and vigorously whisk in a tablespoon of boiling water using a balloon whisk. This should bring back that smooth silky mixture we want.
Broken mayonnaise can be saved by adding mustard
If this fails, place an egg yolk into a separate clean bowl, and whisk in a teaspoon of cold water and Dijon mustard. Slowly add the split mayonnaise into the egg yolk mixture and whisk until the mayonnaise is smooth and forms a thick sauce.
Turn down the heat
Mayonnaise will often split if it is being mixed in a food processor or blender. The heat produced by the motor and speed can cause this to happen. To avoid a split sauce, use fridge cold ingredients and chilli the bowl in cold tap water before using.
