Potato Pizza with Bacon and Thyme

- Preheat oven to 200°C
- Roll pizza dough to make two 12-inch bases, approximately 5mm thick. Dock with a fork
- Spread passata over bases, top with potato, bacon and mozzarella. Drizzle with olive oil and sprinkle sea salt and thyme leaves
- Bake for 15 minutes or until golden. Garnish with thyme sprigs and serve
Basic Pizza Dough
- Mix yeast with warm water and set aside in warm place until mixture foams
- In a large bowl mix flour, salt and sugar. Create a well and slowly mix in yeast mixture and olive oil until a dough forms
- Place dough in large lightly oiled bowl. Cover with damp towel and place in a warm place to proof
