Ham and Zucchini Impossible Pie
Ingredients:
Method:
  1. Preheat oven to 180°C. Lightly grease a 30cm round, 5 cup capacity baking dish
  2. Heat oil in a frypan over medium-high heat. Add onion and garlic and cook stirring until soft. Add zucchini, ham and fresh thyme and continue to stir for one minute. Remove from heat, and set aside to cool
  3. In a separate bowl, whisk eggs, milk and butter and season
  4. Add cheese to cooled ham mixture, followed by egg mix. Add flour and stir to combine
  5. Pour into prepared dish and top with extra cheese
  6. Bake for 35-40 minutes or until golden and set. Remove from oven, cool in pan for 10 minutes
  7. Serve with a fresh salad mix
