  1. Place yoghurt cubes and frozen apricot and remaining ingredients in a strong blender or processor, in batches
  2. Pulse until creamy and smooth
  3. Serve as is, or freeze for a thicker consistency. Top with chopped pistachios, if desired

I am interested in making this as I love apricots, so I was wondering what type of yoghurt do you use for the freezing yoghurt mentioned in the recipe, as it is not specified in the ingredients
