Corn Salsa
  1. Combine all ingredients in a bowl. Squeeze with lime juice, season with salt and drizzle with olive oil.
Tips & Hints:
  • This salsa is perfect with chicken, fish or for your next taco night. Use fresh corn when in season. Cook on a hot BBQ until evenly charred. Cool and cut off kernels. Toss with remaining ingredients.
  • Salsa can be made a few days in advance but omit coriander. Add coriander an hour before serving. Store leftover in a sealed container for 1-2 days.
