Mexican Inspired Grilled Salmon with Garlic Aioli

Method:
- COMBINE the mayonnaise, garlic and coriander, cover and chill until required
- COMBINE the lime juice, extra coriander, chilli, oil, coriander, paprika and salt and pour over fish. Marinate at room temperature for 15 minutes
- LIFT fish from marinade and cook on an oiled chargrill plate over a medium-high heat for 4-6 minutes or until just cooked. Serve with garlic aioli
Tips & Hints:
- Coriander seeds may be crushed in a mortar and pestle, or by placing in a greaseproof paper package and gently hitting with a rolling pin.
