What are Rice Bubble Crackles made from?
As you can tell from the name, one of the main ingredients is Rice Bubbles cereal. The Kellogg’s brand of Rice Bubbles is is made from puffed grains of whole white rice.
The puffed rice is very light and crispy, giving chocolate crackles that “crackly” texture.
The next most important ingredient is Copha, which binds the rice crackles. It’s important to use Copha as it holds the Rice Bubbles and other ingredients together even at room temperature so they're easy to take to picnics, cake stalls and parties.
Nowadays there are many different rice crackle flavours such as Dark Cherry Chocolate Crackles, White Christmas crackles and more, so other ingredients may include cocoa powder, milk powder, white chocolate, dried fruits, marshmallows and other lollies.
In classic rice bubble chocolate crackles, you only need 5 ingredients:
- Copha
- Icing sugar
- Cocoa powder
- Rice bubbles
- Desiccated coconut
