In a small bowl mix 1/4 of the olive oil with the garlic, rosemary and oregano, set aside
Heat butter and remaining oil in a deep frying pan over medium heat. Cook onion for 10 minutes stirring often until softened. Reduce heat to low, add sugar and cook for another 10-15 minutes until soft and light brown in colour
Remove from heat, add balsamic vinegar, season with salt and pepper and stir through
Brush pizza base with the garlic & rosemary oil and top with caramelised onion, figs and small chunks of gorgonzola evenly placed around the pizza
Place pizza in the oven for 10-15 minutes until the cheese is melted and base is crispy, remove from oven then top with rocket & shaved Perfect Italiano Parmesan, cut and serve
Tips & Hints:
If figs are not in season or are unavailable, replace with thin slices of fresh pear.
