Caramelised Onion, Fig & Gorgonzola Pizza
Ingredients:
Method:
  1. Preheat oven to 250°C
  2. In a small bowl mix 1/4 of the olive oil with the garlic, rosemary and oregano, set aside
  3. Heat butter and remaining oil in a deep frying pan over medium heat. Cook onion for 10 minutes stirring often until softened. Reduce heat to low, add sugar and cook for another 10-15 minutes until soft and light brown in colour
  4. Remove from heat, add balsamic vinegar, season with salt and pepper and stir through
  5. Brush pizza base with the garlic & rosemary oil and top with caramelised onion, figs and small chunks of gorgonzola evenly placed around the pizza
  6. Place pizza in the oven for 10-15 minutes until the cheese is melted and base is crispy, remove from oven then top with rocket & shaved Perfect Italiano Parmesan, cut and serve
Tips & Hints:
  • If figs are not in season or are unavailable, replace with thin slices of fresh pear.

We used blue cheese instead and added some leftover slow cooked balsamic lamb in the last 5 mins but the main components of this recipe worked SO well! I doubled the amount of herb and garlic infused oil to get the base full of flavour. What I loved is that everything worked. The onion was delish and I used 2 figs. Next time, I would probably pre coat the rocket in the same oil just because I don’t like rocket without dressing! But this is an awesome recipe.
