Guacamole Cups
- SPRAY both sides of the gow gee wrappers with oil and press into 24 mini muffin pans. Bake in a moderate oven 180°C for 12 minutes or until crisp. Stand 5 minutes then remove to a wire rack. Cool
- BEAT the PHILLY in a bowl until smooth then add the avocado and mash with a fork until almost smooth. Stir through the onion, lemon juice, tabasco and seasonings until just combined, then spoon into the cups
- COMBINE the extra capsicum, extra onion, extra olives and dressing then spoon over the guacamole. Serve immediately
Tips & Hints:
- Cups can be assembled and refrigerated up to 2 hours ahead.
