Salt Pepper Quail Breast with Aioli and Charred Lime Cheeks
Ingredients:
Method:
  1. Mix the mayonnaise with the garlic
  2. Grill the 2 lime cheeks
  3. Heat oil until it spits when adding food or heat fryer if you have one to 180°C, coat the quail breasts with the spiced cornflour and shake off excess, fry the skewers until golden brown (approximately 2 minutes each) and drain on paper
  4. Serve with lime cheeks and garlic soy mayonnaise
Tips & Hints:
  • When serving skewers as a canape make sure you take a drop bowl with you for the guests to put the sticks in it
