Spatchcock
- Thread each spatchcock onto a skewer
- Combine the spices, garlic and lemon juice and brush generously over the spatchcock
- Heat a grillpan or frypan over medium heat and cook the spatchcock for 5 minutes on each side or until cooked through
Salsa
- Combine salsa ingredients
To Serve
- Serve the spatchcock with salsa, tortilla, lettuce and guacamole
