Frozen Strawberry Yoghurt

- For best results use the KitchenAid Artisan Diamond Blender
- Place the berries into the blender jug with the lemon juice. Cover, select the chop function and process for 5 seconds
- Add the yoghurt, honey and lemon rind. Recover, select the chop function and process for 5-10 seconds or until it reaches the desired consistency
- Pour the mixture into a shallow container that is suitable for freezing. Cover with cling film
- Freeze for 2 hours, remove from the container, return to clean and dry jug, cover and select the chop function and process for 10 seconds
- Return mixture to the container, cover and freeze for a minimum of 4 hours or until ready to serve
- Serve in scoops with extra fresh berries if desired
