Method:
Avocado and Banana Smoothie
- Place all ingredients in a blender and blend until smooth. Serve immediately
Avocado Tuna Snack
- In a medium sized bowl, combine tuna and mayonnaise. Season to taste. Stir until combined
- Stir through avocado
- Serve with pita toasts
Avocado and Ham Salad Sandwich
- Spread the avocado on top of each slice of bread
- Top with remaining ingredients and season to taste
- Slice sandwiches into halves or quarters
Easy Avocado Parmigiana
- Preheat oven to 200◦C/180◦C fan-forced. Grease and line a baking tray with baking paper
- Place one chicken breast between 2 sheets of baking paper. Gently flatten with a rolling pin to ½ cm thick
- Coat each chicken breast in flour, shake off excess. Then dip in egg, and press into breadcrumbs, coating both sides
- Heat and oiled non-stick fry pan, with enough oil to shallow fry, and fry chicken for about 2 minutes on each side or until golden
- Transfer to prepared tray. Evenly spread mustard over the top side of the chicken. Top with sliced avocado and then the cheese
- Bake for 7-8 minutes or until cooked through
- Remove from oven and serve with a simple salad
