This vegetarian lasagne recipe is layered with pumpkin lasagne sheets and vegetables. If you can't find fresh pumpkin lasagne sheets you can easily replace with any fresh lasagne.

Vegetable lasagne
Ingredients:
Method:
  1. Preheat oven to 200°C/180°C fan-forced.
  2. Melt 20g butter in medium frying pan over medium heat. Cook leeks, stirring, for 5 minutes or until soft. Add thyme and garlic. Cook, stirring, for 1 minute or until fragrant. Season with salt and pepper. Transfer to a plate.
  3. Melt remaining butter in a medium saucepan over medium heat. Add flour. Cook, stirring, for 1 minute or until bubbling. Remove from heat. Gradually stir in milk until combined. Return to heat. Cook, stirring constantly, 3 minutes or until sauce boils and thickens. Remove from heat. Season with salt and pepper.
  4. Combine the spinach and ricotta and season with salt and pepper.
  5. Cover the base of a baking dish with half the white sauce. Layer 1/3 lasagne sheets trimming to fit. Layer with zucchini ribbons then spread over the leek mixture. Layer with another third of the lasagne sheets. Spread with half the ricotta and spinach mixture. Add a layer of the pumpkin and arrange the boiled eggs, cut side down, over the top. Place the asparagus in among the eggs then dot with the remaining ricotta and spinach mixture. Layer using remaining lasagne sheets and spread with remaining white sauce. Scatter top with cheese.
  6. Bake, covered with foil, for 20-25 minutes. Uncover. Bake for a further 10 minutes or until cheese is melted and golden and pasta is tender. Stand for 10 minutes before cutting. Serve scattered with basil leaves.
Tips & Hints:
  • You can replace fresh lasagne sheets with the pumpkin sheets if unavailable.

Hi Mazzab Thanks for your query about the pumpkin lasagne sheets. At the time this recipe was created theses Lasagne sheets were available in major supermarkets but it looks like these products may have been deleted which unfortunately is beyond our control. You can however use fresh lasagne sheets in this recipe and it will still be delicious. Let use know what you think of the recipe when you've made it. PS: we updated the recipe with this tip too. Am yet to cook this recipe (but will) however is here such a product at "pumpkin" lasagne sheets as listed in this recipe? why do I ask? Well I went on line to both the coles and woolies websites and neither retailer sell this product. Question is there such a product or is this a "typo"? If an an error, would the webmaster please amend the recipe to save other readers going on a "wild goose chase" for a product that is elusive!? Many thanks. Mazzab.
