Quail Salad with Fresh Mint and Lime
Ingredients:
Quail Salad with Fresh Mint and Lime
400g Quail Breast Fillets
Marinade:1 tablespoon peanut oil
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
2 tablespoons
lemon or lime juice
Salad: 1 cup firmly packed coriander leaves
1 cup firmly packed mint leaves
1/2 cup firmly packed vietnamese mint leaves (available summer months)
1/2 cup firmly packed thai basil leaves
1 lebanese cucumber, thinly sliced
125g bean sprouts
1/3 cup fried shallots (available from the asian section of your supermarket)
Dressing
1/4 cup lemon or lime juice
2 tablespoons peanut oil
2 cloves garlic, finely chopped
1 red birds eye chilli, finely chopped
3 teaspoons castor sugar
2 teaspoons fish sauce
1/2 teaspoon white pepper
Method:
Quail Salad with Fresh Mint and Lime
Combine marinade ingredients, brush over quail and set aside for 30 minutes
Barbecue or char grill quail, skin side down for 3 minutes each side or cook to your liking
Place all salad ingredients in a large bowl, except for shallots, and toss with the dressing
Serve salad on plates topped with quail
Sprinkle with fried shallots
Dressing
Whisk together all the dressing ingredients
